- 1 cup of fresh strawberries, hulled and sliced
- 1 cup of fresh blueberries
- 1 cup of fresh raspberries
- 1 cup of mascarpone cheese
- 1 cup of heavy whipping cream
- 1/4 cup of powdered sugar
- 1 teaspoon of vanilla extract
- 1 cup of graham crackers, crushed
- Fresh mint leaves for garnish
Instructions
- Prepare the whipped cream by combining heavy whipping cream, powdered sugar, and vanilla extract in a mixing bowl. Beat until soft peaks form.
- Gently fold mascarpone cheese into half of the whipped cream until well combined.
- Rinse and dry the strawberries, blueberries, and raspberries. Slice the strawberries if needed.
- In a clear glass dish, layer crushed graham crackers at the bottom.
- Spoon a layer of the mascarpone and whipped cream mixture over the graham cracker layer.
- Add a layer of mixed berries on top of the mascarpone layer.
- Continue layering with graham crackers, mascarpone mixture, and berries until reaching the top of the glass.
- Top the final layer with the remaining whipped cream.
- Garnish with whole berries and mint leaves.
- Cover and refrigerate for at least 2 hours before serving.
- Scoop out portions to serve, ensuring each has a mix of layers.
