- 500 grams chicken breast, sliced into thin strips
- 200 grams rice noodles
- 1 red bell pepper, sliced into thin strips
- 1 yellow bell pepper, sliced into thin strips
- 200 grams broccoli, cut into small florets
- 100 milliliters sweet chili sauce
- 30 milliliters soy sauce
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 30 milliliters sesame oil
- 1 tablespoon olive oil (for cooking)
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
- 1 tablespoon sesame seeds (for garnish)
Instructions
- Cook the rice noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a large skillet or wok, heat the olive oil over medium-high heat. Add the sliced chicken breast and season with salt and pepper. Stir-fry for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant. Then, add the sliced bell peppers and broccoli florets. Stir-fry for about 3-4 minutes, or until the vegetables are tender-crisp.
- Return the cooked chicken to the skillet with the vegetables. Add the cooked rice noodles, sweet chili sauce, soy sauce, and sesame oil. Toss everything together gently, ensuring the noodles and chicken are well coated with the sauce. Cook for an additional 2-3 minutes until everything is heated through.

- For a gluten-free option, use gluten-free rice noodles and tamari instead of soy sauce.
- Swap chicken for tofu or shrimp for a different protein choice.
