- 1/2 cup sweet chili sauce
- 2 tablespoons olive oil
- 8 small corn tortillas
- 2 cups shredded red cabbage
- 1 large avocado, sliced
- 1 lime, cut into wedges
- 1/4 cup fresh cilantro, chopped
- 3 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Rinse the shrimp under cold water and pat dry with a paper towel. Combine shrimp with minced garlic, salt, and pepper in a medium bowl.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until pink and opaque. Pour in the sweet chili sauce and stir to coat, cooking for an additional 1-2 minutes.
- In another skillet, heat corn tortillas over medium heat for about 30 seconds on each side until warm and slightly crisped. Keep warm by wrapping in a kitchen towel.
- Assemble each taco by placing shrimp in the center of a warm tortilla, topping with shredded cabbage, avocado slices, and cilantro. Serve with lime wedges and drizzle with remaining sweet chili sauce.
