  • 1 pound shrimp, peeled and deveined
  • 1/2 cup sweet chili sauce
  • 2 tablespoons olive oil
  • 8 small corn tortillas
  • 2 cups shredded red cabbage
  • 1 large avocado, sliced
  • 1 lime, cut into wedges
  • 1/4 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse the shrimp under cold water and pat dry with a paper towel. Combine shrimp with minced garlic, salt, and pepper in a medium bowl.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side until pink and opaque. Pour in the sweet chili sauce and stir to coat, cooking for an additional 1-2 minutes.
  3. In another skillet, heat corn tortillas over medium heat for about 30 seconds on each side until warm and slightly crisped. Keep warm by wrapping in a kitchen towel.
  4. Assemble each taco by placing shrimp in the center of a warm tortilla, topping with shredded cabbage, avocado slices, and cilantro. Serve with lime wedges and drizzle with remaining sweet chili sauce.
