Ingredients

  • 2 cups fresh corn kernels
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup chopped green onions
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • Oil for frying
  • Slider buns

Instructions

  1. In a large bowl, combine the corn kernels, flour, cornmeal, green onions, baking powder, salt, and pepper. Mix well.
  2. In a separate bowl, whisk together the eggs. Pour this mixture into the dry ingredients and stir until just combined.
  3. Heat oil in a frying pan over medium heat. Drop spoonfuls of the fritter mixture into the pan and fry until golden brown, about 3-4 minutes per side.
  4. In a small bowl, mix mayonnaise, minced jalapeños, lime juice, and a pinch of salt to make the jalapeño aioli.
  5. Serve the fritters warm on slider buns, drizzled with jalapeño aioli or served on the side for dipping.
