- 2 cups fresh corn kernels
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/4 cup chopped green onions
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- Oil for frying
- Slider buns
Instructions
- In a large bowl, combine the corn kernels, flour, cornmeal, green onions, baking powder, salt, and pepper. Mix well.
- In a separate bowl, whisk together the eggs. Pour this mixture into the dry ingredients and stir until just combined.
- Heat oil in a frying pan over medium heat. Drop spoonfuls of the fritter mixture into the pan and fry until golden brown, about 3-4 minutes per side.
- In a small bowl, mix mayonnaise, minced jalapeños, lime juice, and a pinch of salt to make the jalapeño aioli.
- Serve the fritters warm on slider buns, drizzled with jalapeño aioli or served on the side for dipping.
Notes
- For gluten-free, use a gluten-free flour blend.
- For vegan, substitute eggs with flax eggs and use plant-based milk.
- Store leftovers in an airtight container in the refrigerator for up to three days.
