Description

Sweet corn honey butter muffins are a delightful treat that combines the sweetness of corn with the rich flavor of honey, perfect for breakfast, snacks, or as a side dish.


Ingredients

  • Fresh corn kernels – 1 cup (about 2-3 ears of corn)
  • All-purpose flour – 1 ½ cups
  • Baking powder – 2 teaspoons
  • Sugar – ¼ cup
  • Salt – ½ teaspoon
  • Milk – ¾ cup
  • Eggs – 2 large
  • Honey – ¼ cup (plus extra for glazing)
  • Butter – ½ cup (1 stick, melted and slightly cooled)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.
  3. In another bowl, beat the eggs, then add the milk, melted butter, and honey. Whisk until the mixture is smooth and well blended.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together using a spatula or wooden spoon until just combined.
  5. Gently fold in the fresh corn kernels until evenly distributed throughout the batter.
  6. Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
  7. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.
  8. Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Brush the tops lightly with additional honey for a sweet glaze.
  9. Transfer the muffins to a wire rack to cool completely. Enjoy them warm or at room temperature.

Notes

  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • To make it dairy-free, use almond milk or oat milk instead of regular milk and replace butter with coconut oil.
