Ingredients
- Fresh corn kernels – 1 cup (about 2-3 ears of corn)
- All-purpose flour – 1 ½ cups
- Baking powder – 2 teaspoons
- Sugar – ¼ cup
- Salt – ½ teaspoon
- Milk – ¾ cup
- Eggs – 2 large
- Honey – ¼ cup (plus extra for glazing)
- Butter – ½ cup (1 stick, melted and slightly cooled)
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.
- In another bowl, beat the eggs, then add the milk, melted butter, and honey. Whisk until the mixture is smooth and well blended.
- Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together using a spatula or wooden spoon until just combined.
- Gently fold in the fresh corn kernels until evenly distributed throughout the batter.
- Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.
- Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.
- Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Brush the tops lightly with additional honey for a sweet glaze.
- Transfer the muffins to a wire rack to cool completely. Enjoy them warm or at room temperature.
