Description

Sweet Corn Jalapeño Fritter Waffles are a delightful twist on traditional waffles, combining the sweetness of corn with a spicy kick from jalapeños. They are crispy on the outside and fluffy on the inside, perfect for breakfast or brunch.

Ingredients

Scale
  • 2 cups fresh corn kernels (about 34 ears of corn)
  • 12 jalapeños, finely chopped (adjust based on spice preference)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1/4 cup green onions, finely chopped
  • 1/2 teaspoon salt
  • Honey for drizzling (optional)
  • Olive oil or cooking spray for greasing the waffle iron

Instructions

  1. Prepare the corn by cutting the kernels off the cob or using drained canned/frozen corn.
  2. Mix the dry ingredients: combine flour, baking powder, and salt in a large bowl.
  3. Combine the wet ingredients: beat the eggs and mix with milk in another bowl.
  4. Combine the mixtures: pour wet ingredients into dry ingredients and stir until just combined.
  5. Add the mix-ins: fold in corn, jalapeños, and green onions into the batter.
  6. Preheat the waffle iron and grease it with olive oil or cooking spray.
  7. Cook the waffles: pour batter onto the waffle iron and cook until golden brown, about 5-7 minutes.
  8. Serve and enjoy: remove waffles, drizzle with honey if desired, and serve warm.

Notes

  • For a gluten-free option, use a gluten-free flour blend.
  • Substitute almond or oat milk for a dairy-free version.
  • For a milder flavor, use bell peppers instead of jalapeños.
  • Add cheese for extra flavor; cheddar or pepper jack works well.
