Instructions
- In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well mixed.
- In a separate bowl, beat the eggs and then add the milk and melted butter. Whisk until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fold in the fresh corn kernels and chopped scallions until evenly distributed throughout the batter.
- Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it.
- Pour an appropriate amount of batter onto the preheated waffle iron and cook until golden brown and crispy, about 4-5 minutes.
- Remove the waffles from the iron, assemble with desired fillings, and top with another waffle to create a sandwich.
