  • 3/4 cup milk
  • 2 large eggs
  • 1/4 cup melted butter (plus extra for serving)
  • 1/2 teaspoon salt

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well mixed.
  2. In a separate bowl, beat the eggs and then add the milk and melted butter. Whisk until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Fold in the fresh corn kernels and chopped scallions until evenly distributed throughout the batter.
  5. Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it.
  6. Pour an appropriate amount of batter onto the preheated waffle iron and cook until golden brown and crispy, about 4-5 minutes.
