- 2 cups elbow macaroni (about 200 g)
- 1 can (14.5 oz or 400 g) diced tomatoes
- 1 can (15 oz or 425 g) black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 packet (about 1 oz or 28 g) taco seasoning
- 1 cup shredded cheddar cheese (about 100 g)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1/4 cup chopped cilantro (for garnish)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 cups water or broth (480 ml)
Instructions
- In a large pot, bring water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion is translucent. Increase the heat to medium-high and add the ground beef. Season with salt and pepper. Cook until the beef is browned and fully cooked, breaking it up into small pieces as it cooks, about 5-7 minutes.
- Once the beef is cooked, stir in the diced tomatoes (with their juices), black beans, corn, taco seasoning, and 2 cups of water or broth. Bring the mixture to a simmer.
- Add the cooked elbow macaroni to the skillet. Stir well to combine all ingredients, ensuring the pasta is evenly coated with the sauce. Let it simmer for an additional 5 minutes, allowing the flavors to meld.
- Sprinkle the shredded cheddar cheese over the top of the skillet. Cover the skillet with a lid and let it sit for about 2-3 minutes, or until the cheese is melted and bubbly.
- Remove the skillet from heat and garnish with chopped cilantro. Serve hot, either directly from the skillet or plated, and enjoy this vibrant and flavorful Tex-Mex dish!
