Delicious Texas Peach Cobbler Cookie Bars that combine buttery cookie dough with juicy peaches, perfect for summer gatherings.


Ingredients

  • 4 cups fresh peaches, peeled and diced
  • 1 cup brown sugar, packed
  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup rolled oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine diced peaches with half of the brown sugar and a pinch of salt, then set aside.
  3. Cream together softened butter and remaining brown sugar until light and fluffy, then mix in flour, oats, baking powder, cinnamon, and vanilla extract.
  4. Press two-thirds of the cookie dough into the bottom of a baking dish, spread peach filling over it, and crumble remaining dough on top.
  5. Bake for 30-35 minutes until golden brown and bubbly, then cool for 15-20 minutes before slicing.

Notes

  • For vegan, substitute butter with coconut oil and use flax eggs.
  • Frozen peaches can be used if fresh ones are unavailable.
