- 4 cups fresh peaches, peeled and diced
- 1 cup brown sugar, packed
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup rolled oats
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine diced peaches with half of the brown sugar and a pinch of salt, then set aside.
- Cream together softened butter and remaining brown sugar until light and fluffy, then mix in flour, oats, baking powder, cinnamon, and vanilla extract.
- Press two-thirds of the cookie dough into the bottom of a baking dish, spread peach filling over it, and crumble remaining dough on top.
- Bake for 30-35 minutes until golden brown and bubbly, then cool for 15-20 minutes before slicing.
Notes
- For gluten-free, use a gluten-free flour blend.
- For vegan, substitute butter with coconut oil and use flax eggs.
- Frozen peaches can be used if fresh ones are unavailable.
- Store in an airtight container for up to three days at room temperature or a week in the refrigerator.
