Description

The Thai Coconut Sticky Rice Bites Recipe is a delightful fusion of sweet and creamy flavors, featuring glutinous rice soaked in rich coconut milk. These bite-sized treats are characterized by their chewy texture and are often enjoyed as a dessert or snack.


Ingredients

  • Glutinous rice: 1 cup (200g, also known as sticky rice)
  • Coconut milk: 1 cup (240ml, full-fat for creaminess)
  • Sugar: 1/4 cup (50g, adjust to taste)
  • Salt: 1/4 teaspoon (to enhance flavor)
  • Pandan leaves: 2-3 leaves (for flavor and decoration)
  • Toasted sesame seeds: 2 tablespoons (for garnish)

Instructions

  1. Start by rinsing the glutinous rice under cold water until the water runs clear.
  2. Soak the rice in water for at least 4 hours, or overnight for best results.
  3. After soaking, drain the rice and place it in a steamer lined with cheesecloth or banana leaves. Steam the rice for about 20-30 minutes until it becomes tender and translucent.
  4. While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan. Heat gently over medium-low heat until the sugar dissolves, but do not let it boil.
  5. Once the rice is cooked, transfer it to a large mixing bowl. Pour about 3/4 of the warm coconut mixture over the hot rice and mix gently until the rice is evenly coated. Allow it to sit for about 15-20 minutes to absorb the flavors.
  6. Line a square or rectangular dish (about 8×8 inches) with parchment paper. Transfer the sticky rice mixture into the dish and press it down firmly to create an even layer. Let it cool to room temperature, then refrigerate for at least 1 hour to firm up.
  7. Once chilled, remove the sticky rice from the dish using the parchment paper. Cut it into small squares or rectangles.
  8. Drizzle the remaining coconut mixture over the top of the rice bites and sprinkle with toasted sesame seeds. Optionally, you can also add thin strips of pandan leaves for decoration. Arrange the Thai coconut sticky rice bites on a serving platter.

Notes
