Description

Three Milks Cake is a delightful dessert made of a light sponge soaked in a mixture of evaporated milk, condensed milk, and heavy cream, topped with whipped cream and optionally garnished with fresh fruit or cinnamon. This dessert is creamy, moist, and addictive with a slight caramel flavor.

  • 1 tsp baking powder
  • 1/4 tsp salt
  • 5 large eggs
  • 1 cup granulated sugar
  • 1/3 cup whole milk
  • 1 tsp vanilla extract
  • 1 cup evaporated milk
  • 1 cup sweetened condensed milk
  • 1 cup heavy cream
  • 1 cup whipped cream (for frosting)
  • Fresh fruit or cinnamon (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Sift together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, beat the egg yolks with sugar until pale and creamy. Stir in milk and vanilla extract. Gradually fold in the flour mixture until combined.
  3. Whip the egg whites in a clean bowl until stiff peaks form, then gently fold them into the batter.
  4. Pour the batter into a greased 9×13 inch baking dish and bake for 25-30 minutes until a toothpick inserted comes out clean. Let the cake cool for 10 minutes, then invert onto a wire rack to cool completely.
  5. Once the cake is cool, mix together the evaporated milk, sweetened condensed milk, and heavy cream. Poke holes in the cake with a skewer and slowly pour the milk mixture over it. Let it soak for at least an hour or refrigerate for a few hours.
  6. Frost with whipped cream and garnish with fresh fruit or cinnamon before serving. Serve chilled or at room temperature.

  • For a richer flavor, add a tablespoon of rum or flavored liquors to the milk mixture.
  • Resting the cake overnight in the fridge after soaking helps meld the flavors.
  • To prevent overmixing, gently fold the whipped egg whites into the batter.
  • Ensure that the cake has soaked sufficiently before serving to avoid a dry texture.
