Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine tahini, brown sugar, and granulated sugar, mixing until smooth. Add the egg and vanilla extract, mixing until fully incorporated.
  3. In a separate bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  4. Gently fold in chocolate chips and toasted coconut flakes until evenly distributed.
  5. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are golden brown and the centers appear set but slightly soft.
