Instructions

  2. Whisk cornstarch with a few tablespoons of the warm milk mixture in a small bowl until smooth. Gradually pour this back into the saucepan, whisking continuously to avoid lumps.
  3. Cook over medium heat, stirring constantly until the pudding thickens (about 5–7 minutes). Remove from heat once it reaches a creamy consistency.
  4. Stir in vanilla extract and butter until melted and combined. Fold in toasted coconut flakes, reserving some for garnish.
  5. Pour pudding into serving dishes and cover with plastic wrap pressed directly on the surface to prevent a skin from forming. Refrigerate at least 2 hours until fully chilled.
