Toasted Marshmallow S’mores Cookies are a delightful blend of chocolate, graham crackers, and toasted marshmallows, perfect for any sweet treat lover.

- 1 ½ cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup brown sugar, packed
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1 cup graham cracker crumbs
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt. Set aside.
- In a large mixing bowl, use an electric mixer to cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Gently fold in the chocolate chips and graham cracker crumbs until evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers look slightly underbaked.
- Remove the cookies from the oven and immediately top each cookie with a few mini marshmallows. Return the baking sheet to the oven and broil on low for 1-2 minutes, or until the marshmallows are toasted and golden brown. Keep a close eye on them to prevent burning.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Store the cookies in an airtight container at room temperature for up to a week.
- If you want to keep them longer, consider refrigerating them.
- To reheat, simply pop them in the microwave for a few seconds.
- If you freeze them, wrap each cookie individually and store them in a freezer bag. They can last up to three months!
