Description

Toasted Marshmallow S’mores Cookies are a delightful blend of chocolate, graham crackers, and toasted marshmallows, perfect for any sweet treat lover.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup graham cracker crumbs
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, use an electric mixer to cream together the softened unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently fold in the chocolate chips and graham cracker crumbs until evenly distributed throughout the dough.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers look slightly underbaked.
  9. Remove the cookies from the oven and immediately top each cookie with a few mini marshmallows. Return the baking sheet to the oven and broil on low for 1-2 minutes, or until the marshmallows are toasted and golden brown. Keep a close eye on them to prevent burning.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Store the cookies in an airtight container at room temperature for up to a week.
  • If you want to keep them longer, consider refrigerating them.
  • To reheat, simply pop them in the microwave for a few seconds.
  • If you freeze them, wrap each cookie individually and store them in a freezer bag. They can last up to three months!
