Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. Cream together softened butter and granulated sugar until light and fluffy, about 3-5 minutes. Beat in eggs one at a time, then stir in vanilla extract.
  3. Whisk flour, baking powder, and salt. Gradually add dry ingredients to creamed mixture, alternating with milk; mix until just combined.
  4. Divide batter evenly into pans. Bake 25-30 minutes or until a toothpick comes out clean. Cool 10 minutes, then invert onto wire racks to cool completely.
  5. For filling, cook sliced strawberries, sugar, and lemon juice over medium heat until juices release, about 5 minutes. Stir in cornstarch mixed with water, cook until thickened. Cool.
  6. Whip heavy cream until soft peaks form. Gradually add powdered sugar, beat to combine. Fold in pureed strawberries until light and fluffy.
  7. Assemble cake: place one cake layer, spread strawberry filling, then whipped cream frosting. Repeat for second layer and top with third. Frost entire cake and decorate with fresh strawberries.
