Ingredients

- 2 medium cucumbers, diced
- 1 cup cherry tomatoes, halved
- 1/4 medium red onion, finely chopped
- 1 medium bell pepper, diced
- 2 tablespoons lemon juice, freshly squeezed
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Prepare the Ingredients: Drain the tuna and place it in a large mixing bowl. Break it into smaller pieces. Dice the cucumbers, halve the cherry tomatoes, finely chop the red onion, and dice the bell pepper.
- Mix the Base: In a large bowl, combine the drained tuna, diced cucumbers, halved cherry tomatoes, and chopped red onion. Stir gently.
- Add the Dressing: In a small bowl, whisk together the lemon juice and olive oil. Pour over the salad mixture and season with salt and pepper. Mix until well coated.
- Garnish and Serve: Transfer the salad to a serving dish, garnish with fresh parsley, and serve immediately or chill for 30 minutes.
