Instructions
- Preheat oven to 325°F (163°C). Mix graham cracker crumbs, ⅓ cup sugar, and melted butter. Press into a 9-inch springform pan. Bake for 10 minutes and let cool.
- In a large bowl, beat softened cream cheese until smooth. Gradually add 1 cup sugar and mix. Add eggs one at a time, mixing until just combined.
- Add vanilla extract, sour cream, and heavy cream to the mixture. Mix until creamy and smooth.
- Divide the batter evenly into three bowls. Add pink, blue, and yellow gel food coloring to each and mix well.
- Spoon the colored batters alternately into the center of the crust, creating layers. Swirl gently with a toothpick or knife.
- Bake for 60–70 minutes or until edges are set and center jiggles slightly. Turn off oven, crack the door, and let it cool inside for 1 hour.
- Remove and let cool at room temperature. Chill in the fridge for at least 4 hours or overnight.
- Release cheesecake from pan. Decorate with whipped cream, edible glitter, sprinkles, or fresh fruit. Slice and serve.
