  • ⅓ cup granulated sugar (for crust)
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese (three 8 oz packages), softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ½ cup heavy cream
  • Gel food colors in pink, blue, and yellow
  • Whipped cream (optional)
  • Edible glitter (optional)
  • Rainbow sprinkles (optional)
  • Fresh fruit (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Mix graham cracker crumbs, ⅓ cup sugar, and melted butter. Press into a 9-inch springform pan. Bake for 10 minutes and let cool.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually add 1 cup sugar and mix. Add eggs one at a time, mixing until just combined.
  3. Add vanilla extract, sour cream, and heavy cream to the mixture. Mix until creamy and smooth.
  4. Divide the batter evenly into three bowls. Add pink, blue, and yellow gel food coloring to each and mix well.
  5. Spoon the colored batters alternately into the center of the crust, creating layers. Swirl gently with a toothpick or knife.
  6. Bake for 60–70 minutes or until edges are set and center jiggles slightly. Turn off oven, crack the door, and let it cool inside for 1 hour.
  7. Remove and let cool at room temperature. Chill in the fridge for at least 4 hours or overnight.
  8. Release cheesecake from pan. Decorate with whipped cream, edible glitter, sprinkles, or fresh fruit. Slice and serve.
