- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted and slightly cooled
- 2 teaspoons pure vanilla extract
- 1 cup all-purpose flour
- 2 cups milk (whole or alternative)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners or spray with non-stick cooking spray.
- In a bowl, whisk together eggs and granulated sugar until pale and fluffy.
- Add the melted butter and vanilla extract to the egg mixture and mix until smooth.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing gently until combined.
- Slowly pour in the milk and stir until the batter is smooth. Batter will be thin.
- Pour the batter into the cupcake tin, filling each cup about 2/3 full.
- Bake for 30–40 minutes or until the tops are golden and a toothpick inserted comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Batter will be thinner than traditional cupcake batter; this is normal.
- Cupcakes will form three layers: a dense base, custard center, and light top.
- You can substitute vanilla with almond extract or add citrus zest for variety.
- Use dairy-free butter and plant-based milk for a vegan option.
