- 1/4 cup cornstarch
- 1/4 cup maple syrup (adjust to taste)
- 2 tablespoons lemon zest
- 1 teaspoon vanilla extract
- A pinch of turmeric (optional, for color)
Instructions
- Preheat oven to 350°F (175°C). In a mixing bowl, combine almond flour, rolled oats, melted coconut oil, maple syrup, and salt to form a crumbly dough.
- Press the dough evenly into the bottom of a greased 8-inch square baking dish to form the crust.
- Bake the crust for 10-12 minutes or until edges are golden brown. Remove and let cool slightly.
- Meanwhile, in a saucepan over medium heat, combine coconut milk, lemon juice, cornstarch, maple syrup, lemon zest, vanilla extract, and turmeric (if using). Whisk constantly until thickened and bubbling, about 5-7 minutes.
- Pour the thickened custard over the slightly cooled crust and spread evenly.
- Allow to cool at room temperature, then refrigerate for at least 2 hours to set fully before slicing and serving.
Notes
- For a nut-free version, use sunflower seed flour or oat flour instead of almond flour.
- Ensure oats are certified gluten-free if necessary.
- Turmeric is optional and used purely for a yellow custard color.
- Adjust maple syrup quantity to taste or substitute with a sugar-free option.
