Description

A creamy and sweet vegan strawberry ice cream bursting with fresh strawberry flavor, perfect for hot summer days or festive occasions.


Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 can (400 ml) coconut milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Wash the strawberries thoroughly, remove the green tops, and slice them into smaller pieces.
  2. In a blender, combine the sliced strawberries, coconut milk, maple syrup, vanilla extract, and a pinch of salt. Blend until smooth and creamy.
  3. Pour the blended mixture into a bowl, cover it, and chill in the refrigerator for about 1-2 hours.
  4. After chilling, pour the mixture into an ice cream maker and churn until it reaches a soft-serve consistency, or freeze in a container for 4-6 hours, stirring every hour.

Notes

  • For a lighter option, use almond milk instead of coconut milk.
  • Agave syrup or date syrup can be used as alternative sweeteners.
  • Add a splash of almond extract for extra flavor.
  • Store in an airtight container with parchment paper pressed against the surface to prevent ice crystals.
