Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry with paper towels and season with salt, pepper, and garlic powder.
- In a medium bowl, combine the finely chopped walnuts and breadcrumbs.
- Spread a thin layer of Dijon mustard over each chicken breast and press into the walnut mixture.
- Heat olive oil in a large oven-safe skillet over medium heat and place the coated chicken breasts in the skillet.
- Sear the chicken for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven, let rest for a few minutes, garnish with parsley, and serve warm.
