Ingredients

  • 1 cup walnuts, finely chopped
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels and season with salt, pepper, and garlic powder.
  3. In a medium bowl, combine the finely chopped walnuts and breadcrumbs.
  4. Spread a thin layer of Dijon mustard over each chicken breast and press into the walnut mixture.
  5. Heat olive oil in a large oven-safe skillet over medium heat and place the coated chicken breasts in the skillet.
  6. Sear the chicken for about 3-4 minutes on each side until golden brown.
  7. Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  8. Remove from the oven, let rest for a few minutes, garnish with parsley, and serve warm.
