- 2 tablespoons of lime juice (freshly squeezed)
- 2 tablespoons of honey (plus extra for drizzling)
- 2 cups of ice (crushed or whole, depending on desired texture)
- Fresh mint leaves for garnish (optional)
Instructions
- Prepare the watermelon by cutting it into cubes and removing any seeds.
- Blend the watermelon cubes until smooth to create about 4 cups of watermelon puree.
- Add 2 tablespoons of honey to the watermelon puree and blend until well combined.
- In a separate bowl or blender, mix coconut milk, lime juice, and remaining honey until dissolved.
- If using whole ice cubes, crush them until you achieve a fine, slushy texture.
- Assemble the slushie cups by adding a layer of watermelon puree, followed by the coconut mixture, creating a swirl effect if desired.
- Add a layer of crushed ice on top of the coconut layer.
- Drizzle honey over the top and garnish with fresh mint leaves if desired. Serve immediately.

- For a vegan option, use agave syrup instead of honey.
- Chill watermelon before blending for the best flavor.
