Description

Watermelon fudge is a vibrant, no-bake dessert with a creamy texture and sweet flavor that captures the essence of summer. With layers mimicking watermelon rind, pith, and flesh, it’s as visually fun as it is delicious.


Ingredients

  • 3 cups white chocolate chips
  • 1 (14 oz) can sweetened condensed milk
  • 1 tsp vanilla extract
  • Red and green gel food coloring
  • Mini chocolate chips or sunflower seeds (for “seeds”)
  • Optional: watermelon or fruity extract for flavor

Instructions

  1. In a microwave-safe bowl, combine white chocolate chips and sweetened condensed milk. Microwave in 30-second intervals, stirring each time, until smooth and melted. Stir in vanilla extract.
  2. Divide the mixture into three separate bowls. Color one green for the rind, leave one plain or add white coloring for the pith, and color the third with red or pink gel food coloring for the flesh.
  3. Line a baking dish with parchment paper. Pour in the green layer first, followed by the white layer, then the pink/red layer on top.
  4. Press mini chocolate chips or sunflower seeds into the top layer to resemble watermelon seeds.
  5. Refrigerate for at least 4 hours until firm. Once set, slice into squares or triangle wedges and enjoy!
