Description
A refreshing treat made with watermelon and lime, perfect for hot summer days.
Ingredients

- 4 cups of fresh watermelon, cubed (seedless)
- 1/4 cup of fresh lime juice (about 2–3 limes)
- 2 tablespoons of honey (adjust to taste)
- 1/4 cup of fresh mint leaves, chopped
- A pinch of salt (to taste)
- 1/4 cup of water (optional, for blending)
Instructions
- Prepare the watermelon by cutting it into cubes and placing them in a blender.
- Add lime juice, honey, salt, and mint leaves to the blender and blend until smooth.
- Taste the mixture and adjust sweetness if needed, then blend again.
- Pour the mixture into ice cube trays or silicone molds, leaving space for expansion.
- Freeze for at least 4-6 hours or until solid.
- Remove the bites from the molds, using warm water if necessary.
- Serve on a platter, garnished with mint leaves if desired.
Notes
- Store in an airtight container in the freezer to prevent freezer burn.
- These bites can be made in advance and stored for up to a month.
- For a fun presentation, layer the mixture in different colored molds.
