Description

A refreshing treat made with watermelon and lime, perfect for hot summer days.


Ingredients

Scale
  • 4 cups of fresh watermelon, cubed (seedless)
  • 1/4 cup of fresh lime juice (about 23 limes)
  • 2 tablespoons of honey (adjust to taste)
  • 1/4 cup of fresh mint leaves, chopped
  • A pinch of salt (to taste)
  • 1/4 cup of water (optional, for blending)

Instructions

  1. Prepare the watermelon by cutting it into cubes and placing them in a blender.
  2. Add lime juice, honey, salt, and mint leaves to the blender and blend until smooth.
  3. Taste the mixture and adjust sweetness if needed, then blend again.
  4. Pour the mixture into ice cube trays or silicone molds, leaving space for expansion.
  5. Freeze for at least 4-6 hours or until solid.
  6. Remove the bites from the molds, using warm water if necessary.
  7. Serve on a platter, garnished with mint leaves if desired.

Notes

  • Store in an airtight container in the freezer to prevent freezer burn.
  • These bites can be made in advance and stored for up to a month.
  • For a fun presentation, layer the mixture in different colored molds.
