Description
A refreshing treat made with Greek yogurt, watermelon, and mint, perfect for hot summer days.
Ingredients

- 2 cups of Greek yogurt (plain or vanilla)
- 2 cups of fresh watermelon, diced into small chunks
- 1/4 cup of fresh mint leaves, finely chopped
- 2 tablespoons of honey (adjust to taste)
- A pinch of salt (to taste)
Instructions
- Line a baking sheet with parchment paper.
- In a mixing bowl, combine the Greek yogurt, honey, and a pinch of salt. Stir until well blended and smooth.
- Pour the yogurt mixture onto the prepared baking sheet and spread it evenly into a rectangle or square, about 1/4 inch thick.
- Evenly distribute the diced watermelon and chopped mint leaves over the yogurt layer and gently press them into the yogurt.
- Place the baking sheet in the freezer and let it freeze for at least 4 hours, or until the yogurt is completely firm.
- Once frozen, remove the baking sheet from the freezer, let it sit at room temperature for a few minutes, and then break the yogurt bark into pieces.
Notes
- Store leftovers in an airtight container in the freezer.
- For a vegan option, use coconut yogurt instead of Greek yogurt.
- Agave syrup can replace honey for a vegan-friendly sweetener.
- Consider adding a splash of lime juice for extra flavor.
