Description

A refreshing treat made with Greek yogurt, watermelon, and mint, perfect for hot summer days.


Ingredients

  • 2 cups of Greek yogurt (plain or vanilla)
  • 2 cups of fresh watermelon, diced into small chunks
  • 1/4 cup of fresh mint leaves, finely chopped
  • 2 tablespoons of honey (adjust to taste)
  • A pinch of salt (to taste)

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the Greek yogurt, honey, and a pinch of salt. Stir until well blended and smooth.
  3. Pour the yogurt mixture onto the prepared baking sheet and spread it evenly into a rectangle or square, about 1/4 inch thick.
  4. Evenly distribute the diced watermelon and chopped mint leaves over the yogurt layer and gently press them into the yogurt.
  5. Place the baking sheet in the freezer and let it freeze for at least 4 hours, or until the yogurt is completely firm.
  6. Once frozen, remove the baking sheet from the freezer, let it sit at room temperature for a few minutes, and then break the yogurt bark into pieces.

Notes

  • Store leftovers in an airtight container in the freezer.
  • For a vegan option, use coconut yogurt instead of Greek yogurt.
  • Agave syrup can replace honey for a vegan-friendly sweetener.
