Description

Refreshing Watermelon Sherbet Bars perfect for hot summer days or festive occasions.


Ingredients

  • 4 cups of fresh watermelon, cubed and seeded
  • 1 cup of coconut milk
  • 1/2 cup of sugar (or honey for a natural sweetener)
  • 2 tablespoons of lemon juice (freshly squeezed)
  • A pinch of salt to taste

Instructions

  1. Prepare the watermelon by cutting it into cubes and blending until smooth to make about 4 cups of watermelon puree.
  2. In a large bowl, combine the blended watermelon, coconut milk, sugar, lemon juice, and a pinch of salt. Stir well until fully incorporated.
  3. Pour the mixture into a lined baking dish and spread evenly.
  4. Cover and freeze for at least 4-6 hours, or until solid. If using popsicle molds, insert sticks after 2 hours.
  5. Once the mixture is completely frozen, remove the baking dish from the freezer and let it sit at room temperature for 5–10 minutes to slightly soften.
  6. Lift the sherbet out using the parchment paper, then slice into bars with a sharp knife.
  7. Serve immediately for a cool, fruity treat. Optionally, garnish with fresh mint or a sprinkle of coconut before serving.

  • Store in an airtight container in the freezer for up to a month.
  • Let bars sit at room temperature for a few minutes before serving for a creamier texture.
