Refreshing Watermelon Sherbet Bars perfect for hot summer days or festive occasions.
Ingredients

- 4 cups of fresh watermelon, cubed and seeded
- 1 cup of coconut milk
- 1/2 cup of sugar (or honey for a natural sweetener)
- 2 tablespoons of lemon juice (freshly squeezed)
- A pinch of salt to taste
Instructions
- Prepare the watermelon by cutting it into cubes and blending until smooth to make about 4 cups of watermelon puree.
- In a large bowl, combine the blended watermelon, coconut milk, sugar, lemon juice, and a pinch of salt. Stir well until fully incorporated.
- Pour the mixture into a lined baking dish and spread evenly.
- Cover and freeze for at least 4-6 hours, or until solid. If using popsicle molds, insert sticks after 2 hours.
- Once the mixture is completely frozen, remove the baking dish from the freezer and let it sit at room temperature for 5–10 minutes to slightly soften.
- Lift the sherbet out using the parchment paper, then slice into bars with a sharp knife.
- Serve immediately for a cool, fruity treat. Optionally, garnish with fresh mint or a sprinkle of coconut before serving.
Notes
- Store in an airtight container in the freezer for up to a month.
- Let bars sit at room temperature for a few minutes before serving for a creamier texture.
