Description

These Watermelon Truffles are a refreshing, no-bake treat made with pureed watermelon, cream cheese, and chocolate. Perfect for summer parties or a light dessert, they’re creamy, fruity, and dipped in luscious chocolate for an indulgent finish.

  • 2 cups fresh watermelon, deseeded and pureed
  • 1 cup cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 cups melting chocolate (dark, milk, or white)
  • Cocoa powder or shredded coconut for rolling (optional)

Instructions

  1. Cut the watermelon into small pieces, remove seeds, and blend until smooth. Strain for a smoother texture.
  2. In a bowl, mix the watermelon puree with softened cream cheese until smooth and lump-free.
  3. Add powdered sugar gradually, mixing until a thick, batter-like consistency is formed. Stir in vanilla extract.
  4. Cover the bowl and refrigerate for 30–60 minutes until the mixture is firm enough to shape.
  5. Roll the mixture into 1-inch balls and place on a parchment-lined tray.
  6. Melt the chocolate in 30-second intervals in the microwave, stirring until smooth. Dip each truffle in chocolate and optionally roll in cocoa powder or shredded coconut.
  7. Place coated truffles back on parchment paper and let the chocolate set.
  8. Serve chilled and enjoy. Store leftovers in the refrigerator.
