Description
Whipped Feta Cucumber Snack Toasts are a delightful treat that combines creamy, tangy feta with crisp, refreshing cucumbers, perfect for any occasion.
Ingredients
Scale
- 1 cup feta cheese, crumbled
- 1/4 cup cream cheese, softened
- 2 tablespoons olive oil, plus extra for drizzling
- 1 tablespoon lemon juice
- 1/4 teaspoon salt (or to taste)
- 1 large cucumber, thinly sliced
- Fresh dill, for garnish
- 4 slices of crusty bread (such as sourdough or ciabatta)
Instructions
- In a mixing bowl, combine the crumbled feta cheese, softened cream cheese, olive oil, lemon juice, and salt. Use a hand mixer or food processor to blend until smooth and creamy.
- Preheat your oven to 400°F (200°C). Place the slices of crusty bread on a baking sheet and drizzle with a little olive oil. Bake for about 8-10 minutes, or until golden brown and crispy.
- Once the bread is toasted, remove it from the oven and let it cool slightly. Spread a generous layer of the whipped feta mixture on each slice of toasted bread.
- Top each toast with several thin cucumber slices, arranging them neatly. Finish with a drizzle of extra olive oil and a sprinkle of fresh dill.
Notes
- For a lighter version, use Greek yogurt instead of cream cheese.
- If avoiding gluten, opt for gluten-free bread.
- Add a pinch of red pepper flakes for a spicy kick.
- Store whipped feta in an airtight container in the fridge.
- Assemble toasts just before serving for best texture.
