Ingredients

  • 1/4 cup cream cheese, softened
  • 2 tablespoons olive oil, plus extra for drizzling
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt (or to taste)
  • 1 large cucumber, thinly sliced
  • Fresh dill, for garnish
  • 4 slices of crusty bread (such as sourdough or ciabatta)

Instructions

  1. In a mixing bowl, combine the crumbled feta cheese, softened cream cheese, olive oil, lemon juice, and salt. Use a hand mixer or food processor to blend until smooth and creamy.
  2. Preheat your oven to 400°F (200°C). Place the slices of crusty bread on a baking sheet and drizzle with a little olive oil. Bake for about 8-10 minutes, or until golden brown and crispy.
  3. Once the bread is toasted, remove it from the oven and let it cool slightly. Spread a generous layer of the whipped feta mixture on each slice of toasted bread.
  4. Top each toast with several thin cucumber slices, arranging them neatly. Finish with a drizzle of extra olive oil and a sprinkle of fresh dill.
