Description

A delightful treat that combines creamy ricotta with the sweet, smoky flavor of grilled nectarines, perfect for breakfast, brunch, or a light dessert.


Ingredients

  • 1 cup fresh ricotta cheese
  • 4 slices of crusty bread (such as sourdough or ciabatta)
  • 2 ripe nectarines, pitted and sliced
  • 2 tablespoons honey (plus extra for drizzling)
  • 2 tablespoons olive oil (divided)
  • A handful of fresh mint leaves for garnish
  • Sea salt to taste
  • Black pepper to taste (optional)

Instructions

  1. Preheat your grill or grill pan over medium heat. Brush the sliced nectarines lightly with 1 tablespoon of olive oil.
  2. Place the nectarines cut-side down on the grill. Grill for about 3-4 minutes until they have nice grill marks and are slightly softened. Flip them over and grill for an additional 1-2 minutes. Remove from the grill and set aside.
  3. In a medium bowl, add the fresh ricotta cheese. Using a fork or a hand mixer, whip the ricotta until it becomes creamy and smooth. You can add a pinch of sea salt and a drizzle of honey to enhance the flavor.
  4. In the same grill or grill pan, add the slices of crusty bread. Grill for about 2-3 minutes on each side, or until they are golden brown and crispy.
  5. Spread a generous layer of whipped ricotta on each slice of toasted bread. Top with the grilled nectarines, arranging them artfully.
  6. Drizzle a little honey over the top of each toast for sweetness. Sprinkle with sea salt and, if desired, a bit of freshly cracked black pepper. Garnish with fresh mint leaves.
  7. Arrange the whipped ricotta toasts on a serving platter and enjoy immediately.

Notes

  • For a lighter option, use cottage cheese instead of ricotta.
  • For a vegan version, try using a plant-based ricotta.
  • If nectarines are out of season, peaches make a great substitute.
  • Swap honey for maple syrup for a vegan sweetener.
