Description

Ingredients

  • 2 large ripe tomatoes (preferably heirloom or vine-ripened)
  • 4 slices of crusty bread (such as sourdough or ciabatta)
  • 2 tablespoons olive oil (plus extra for drizzling)
  • Salt to taste
  • Black pepper to taste
  • A handful of fresh basil leaves, torn

Instructions

  1. In a mixing bowl, add the fresh ricotta cheese and whip until light and fluffy, seasoning with salt and pepper.
  2. Preheat the oven to 400°F (200°C) and toast the bread slices with olive oil for 8-10 minutes until golden brown.
  3. Wash and slice the tomatoes into thin rounds, seasoning with salt and pepper.
  4. Spread the whipped ricotta on each slice of toast and layer the sliced tomatoes on top.
  5. Drizzle with extra olive oil and sprinkle with salt, pepper, and torn basil leaves.
