Instructions
- Crush the graham crackers into fine crumbs using a food processor or by hand in a zip-lock bag with a rolling pin.
- Combine the crumbs with melted butter and press the mixture into the bottom of a 9×13 inch baking dish to form the base.
- Melt white chocolate chips in a heatproof bowl using a microwave or double boiler, then let cool slightly.
- In a mixing bowl, beat cream cheese, powdered sugar, heavy cream, and vanilla extract with a hand mixer until fluffy.
- Gradually blend the melted white chocolate into the cream cheese mixture until smooth.
- Fold in 1 cup of fresh blueberries into the mixture.
- Spread half of the white chocolate-blueberry mixture over the graham cracker base.
- Add another layer of graham crackers, then spread the remaining filling on top.
- Top with the remaining blueberries and drizzle with white chocolate if desired.
- Garnish with fresh mint leaves if using, then chill in the refrigerator before serving.
