- 1 cup (226 g) unsalted butter, melted
- 1 cup (200 g) brown sugar, packed
- 1/2 cup (100 g) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups (240 g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (170 g) white chocolate chips
- 1 cup (150 g) fresh raspberries (or frozen, thawed and drained)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch (23×33 cm) baking pan or line it with parchment paper.
- In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. Gently fold in the white chocolate chips.
- If using fresh raspberries, gently rinse and pat them dry. If using frozen raspberries, ensure they are thawed and drained.
- Pour half of the blondie batter into the prepared baking pan and spread it evenly. Drop spoonfuls of the raspberries over the batter, then pour the remaining batter on top. Use a knife or skewer to gently swirl the raspberries into the batter.
- Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the blondies to cool in the pan for about 10-15 minutes. Then, lift them out using the parchment paper and let them cool completely on a wire rack. Once cooled, cut into squares.
- Arrange the blondies on a rustic wooden board and scatter a few fresh raspberries around for decoration. Enjoy!
