Description

  • 1 cup mashed bananas (about 23 ripe bananas)
  • 3/4 cup sugar (adjust to 1/31/2 cup for less sweetness)
  • 1/3 cup oil (vegetable or coconut oil)
  • 1/2 cup Greek yogurt
  • 1 3/4 cups whole wheat flour
  • 1/4 cup cornstarch or more whole wheat flour
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • For the Crumb Topping:
  • 1/2 cup flour (plain or whole wheat)
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 cup butter (cold)

Instructions

  1. Preheat oven to 360°F (180°C). Grease and line a 9×5 inch loaf pan with parchment paper, leaving overhang for easy removal.
  2. In a medium bowl, combine flour, brown sugar, and cinnamon for crumb topping. Rub in cold butter with fingertips until coarse crumbs form. Refrigerate until ready to use.
  3. In a large bowl, whisk together whole wheat flour, cornstarch, baking powder, cinnamon, and salt.
  4. In another bowl or jug, whisk eggs, mashed bananas, sugar, oil, and Greek yogurt until smooth.
  5. Pour wet ingredients into dry ingredients. Fold gently until just combined; some lumps are okay.
  6. Pour batter into prepared pan and spread evenly. Sprinkle chilled crumb topping evenly over batter.
  7. Bake 50-60 minutes, checking at 50 minutes with a toothpick — it should come out clean or with moist crumbs.
  8. Cool bread in pan 10 minutes. Remove using parchment overhang and transfer to wire rack to cool completely before slicing.
