- 1 cup mashed bananas (about 2–3 ripe bananas)
- 3/4 cup sugar (adjust to 1/3 – 1/2 cup for less sweetness)

- 1 3/4 cups whole wheat flour
- 1/4 cup cornstarch or more whole wheat flour
- 2 teaspoons ground cinnamon
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- For the Crumb Topping:
- 1/2 cup flour (plain or whole wheat)
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 cup butter (cold)
Instructions
- Preheat oven to 360°F (180°C). Grease and line a 9×5 inch loaf pan with parchment paper, leaving overhang for easy removal.
- In a medium bowl, combine flour, brown sugar, and cinnamon for crumb topping. Rub in cold butter with fingertips until coarse crumbs form. Refrigerate until ready to use.
- In a large bowl, whisk together whole wheat flour, cornstarch, baking powder, cinnamon, and salt.
- In another bowl or jug, whisk eggs, mashed bananas, sugar, oil, and Greek yogurt until smooth.
- Pour wet ingredients into dry ingredients. Fold gently until just combined; some lumps are okay.
- Pour batter into prepared pan and spread evenly. Sprinkle chilled crumb topping evenly over batter.
- Bake 50-60 minutes, checking at 50 minutes with a toothpick — it should come out clean or with moist crumbs.
- Cool bread in pan 10 minutes. Remove using parchment overhang and transfer to wire rack to cool completely before slicing.
