For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup butter melted
For the filling:
- 8 oz cream cheese softened
- 3/4 cup confectioner’s sugar
- 8 oz whipped topping like Cool Whip
- 14 –16 oz can crushed pineapple well drained
- 1/2 cup pineapple chunks for topping
- 1/2 cup shredded coconut for topping
Make the Crust: In a bowl, mix graham cracker crumbs and sugar. Add melted butter and mix until combined. Press firmly into the bottom of an 8×8 or 9×9-inch pan.
Prepare the Filling: In another bowl, beat softened cream cheese and confectioner’s sugar until smooth. Fold in whipped topping, then gently mix in the drained crushed pineapple.
Assemble: Spread the filling evenly over the crust. Top with pineapple chunks and shredded coconut.
Chill: Refrigerate for at least 4 hours, preferably overnight, to allow it to set.
