Description
Yogurt Parfait Breakfast Popsicles are a refreshing, nutritious, and portable way to enjoy your favorite parfait flavors in frozen form—ideal for summer mornings or a quick snack.
Ingredients
Scale
- 3 cups chopped strawberries
- 1/4 cup granulated sugar or honey
- 1 cup plain Greek yogurt
- 1/4 to 1/2 cup milk
- 2 to 3 tablespoons honey
- 3/4 cup granola
Instructions
- Macerate the Strawberries: In a saucepan, combine chopped strawberries and sugar or honey. Let sit for 10 minutes, then simmer for 8–10 minutes until thick and jam-like. Let cool.
- Make Yogurt Mixture: In a bowl, whisk Greek yogurt with milk until smooth. Sweeten with 2–3 tablespoons of honey to taste.
- Add Granola: Gently fold granola into the yogurt mixture, maintaining texture.
- Assemble Popsicles: Layer strawberry mixture, then yogurt and granola mix, then more strawberries in popsicle molds. Repeat until full. Tap to remove air bubbles and insert sticks.
- Freeze: Freeze the popsicles for at least 6 hours or overnight until fully set.
- Unmold and Serve: Run molds under warm water to release and enjoy immediately.
Notes
- Use maple syrup or agave instead of honey for a vegan option.
- Granola can soften over time—enjoy popsicles within a few days for best crunch.
- Layering makes for a pretty presentation—alternate carefully.
- Try tropical fruits like mango or pineapple for a summery twist.
