- 2 cans of chickpeas (15 oz each), drained and rinsed
- 2 tablespoons zaatar spice blend
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 tablespoon lemon juice
- Salt to taste
- Fresh parsley (1/4 cup, chopped) for garnish
- Snack cups or small serving bowls for serving
Instructions
- Preheat your oven to 400°F (200°C).
- Spread the drained and rinsed chickpeas on a clean kitchen towel or paper towels and pat them dry gently.
- In a large mixing bowl, combine the dried chickpeas, zaatar spice blend, olive oil, garlic powder, lemon juice, and salt. Toss until evenly coated.
- Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper and roast for about 25-30 minutes, stirring halfway through.
- Once roasted, let the chickpeas cool slightly and spoon them into the prepared snack cups.
- Garnish each cup with freshly chopped parsley and serve immediately.
