Ingredients

  • 2 cans of chickpeas (15 oz each), drained and rinsed
  • 2 tablespoons zaatar spice blend
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • Salt to taste
  • Fresh parsley (1/4 cup, chopped) for garnish
  • Snack cups or small serving bowls for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread the drained and rinsed chickpeas on a clean kitchen towel or paper towels and pat them dry gently.
  3. In a large mixing bowl, combine the dried chickpeas, zaatar spice blend, olive oil, garlic powder, lemon juice, and salt. Toss until evenly coated.
  4. Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper and roast for about 25-30 minutes, stirring halfway through.
  5. Once roasted, let the chickpeas cool slightly and spoon them into the prepared snack cups.
  6. Garnish each cup with freshly chopped parsley and serve immediately.
