- 250 grams (about 8 ounces) of pasta (your choice, such as penne or fusilli)
- 1 medium zucchini, sliced into half-moons
- 2 bell peppers (any color), chopped into bite-sized pieces
- 250 grams (about 2 cups) cherry tomatoes, halved
- 1 medium red onion, sliced
- 3 tablespoons olive oil
- 2 tablespoons zaatar spice blend
- 2 tablespoons freshly squeezed lemon juice
- Salt to taste
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 200°C (400°F).
- In a large bowl, combine the sliced zucchini, chopped bell peppers, halved cherry tomatoes, and sliced red onion. Drizzle with 2 tablespoons of olive oil, sprinkle with zaatar spice blend, and season with salt. Toss until well coated.
- Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper. Roast for about 20-25 minutes, stirring halfway through.
- While the vegetables are roasting, bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and set aside.
- In a large mixing bowl, combine the cooked pasta and the roasted vegetables. Drizzle with the remaining tablespoon of olive oil and the lemon juice. Toss gently to combine.
- Transfer the pasta salad to a serving dish or individual bowls. Sprinkle with chopped fresh parsley and serve warm or at room temperature.
