Ingredients

  • 250 grams (about 8 ounces) of pasta (your choice, such as penne or fusilli)
  • 1 medium zucchini, sliced into half-moons
  • 2 bell peppers (any color), chopped into bite-sized pieces
  • 250 grams (about 2 cups) cherry tomatoes, halved
  • 1 medium red onion, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons zaatar spice blend
  • 2 tablespoons freshly squeezed lemon juice
  • Salt to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, combine the sliced zucchini, chopped bell peppers, halved cherry tomatoes, and sliced red onion. Drizzle with 2 tablespoons of olive oil, sprinkle with zaatar spice blend, and season with salt. Toss until well coated.
  3. Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper. Roast for about 20-25 minutes, stirring halfway through.
  4. While the vegetables are roasting, bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and set aside.
  5. In a large mixing bowl, combine the cooked pasta and the roasted vegetables. Drizzle with the remaining tablespoon of olive oil and the lemon juice. Toss gently to combine.
  6. Transfer the pasta salad to a serving dish or individual bowls. Sprinkle with chopped fresh parsley and serve warm or at room temperature.
