- 4 large bell peppers (any color, preferably a mix of yellow, red, and green)
- 1 lb (450 g) ground chicken
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese (cheddar or a Mexican blend)
- 2 tablespoons lime juice
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil (for cooking)
Instructions
- Preheat your oven to 375°F (190°C).
- Wash the bell peppers, slice the tops off, and remove the seeds and membranes.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute.
- Increase the heat to medium-high and add the ground chicken. Cook until browned and cooked through, about 5-7 minutes.
- Stir in the cumin, chili powder, lime juice, salt, and pepper. Remove from heat and fold in chopped cilantro and half of the shredded cheese.
- Spoon the chicken mixture into each bell pepper, packing it tightly. Place the stuffed peppers upright in a baking dish.
- Sprinkle the remaining shredded cheese over the tops of the stuffed peppers.
- Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is bubbly and golden.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, warm in a skillet over low heat until heated through.
- For freezing, place the mixture in a freezer-safe container for up to 2 months.
