Description

Zesty Chicken Fajita Peppers are a flavorful dish combining tender chicken, vibrant bell peppers, and zesty spices, perfect for gatherings or weeknight meals.


Ingredients

  • 4 large bell peppers (any color, preferably a mix of yellow, red, and green)
  • 1 lb (450 g) ground chicken
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese (cheddar or a Mexican blend)
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the bell peppers, slice the tops off, and remove the seeds and membranes.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute.
  4. Increase the heat to medium-high and add the ground chicken. Cook until browned and cooked through, about 5-7 minutes.
  5. Stir in the cumin, chili powder, lime juice, salt, and pepper. Remove from heat and fold in chopped cilantro and half of the shredded cheese.
  6. Spoon the chicken mixture into each bell pepper, packing it tightly. Place the stuffed peppers upright in a baking dish.
  7. Sprinkle the remaining shredded cheese over the tops of the stuffed peppers.
  8. Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is bubbly and golden.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm in a skillet over low heat until heated through.
  • For freezing, place the mixture in a freezer-safe container for up to 2 months.
