A refreshing and flavorful Zesty Chicken Pasta Salad, perfect for warm days and gatherings.
Ingredients

- 2 cups rotini pasta (uncooked)
- 2 cups grilled chicken breast, diced
- 1 cup cherry tomatoes, halved
- 1 cup bell peppers, diced (any color)
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook the rotini pasta in salted boiling water until al dente, about 8-10 minutes. Drain and rinse under cold water.
- Grill the chicken breasts seasoned with salt and pepper for 6-7 minutes on each side until fully cooked. Let rest and then dice.
- In a large bowl, combine cherry tomatoes, bell peppers, red onion, black olives, and basil.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper for the dressing.
- Add the cooled pasta and diced chicken to the vegetable mixture. Pour the dressing over and toss to combine.
- Taste and adjust seasoning with more salt and pepper if needed.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
- For best results, add dressing just before serving if prepared in advance.
