Description

Ingredients

  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • 46 tablespoons ice water
  • 2 medium zucchinis, thinly sliced
  • 4 ounces goat cheese, crumbled
  • 1 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves (plus extra for garnish)
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a large mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C).
  3. In a bowl, combine the sliced zucchini, crumbled goat cheese, black pepper, and fresh thyme. Toss gently to combine and set aside.
  4. On a lightly floured surface, roll out the chilled dough into a rough circle about 12 inches in diameter. Transfer the dough to a parchment-lined baking sheet.
  5. Spoon the zucchini and goat cheese mixture onto the center of the dough, leaving a 2-inch border around the edges. Gently fold the edges of the dough over the filling, pleating it as you go.
  6. Brush the folded edges of the dough with the beaten egg.
  7. Place the galette in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown and the zucchini is tender.

Notes

  • For a gluten-free option, use a gluten-free flour blend.
  • If lactose intolerant, try a dairy-free cheese alternative.
  • For a crispier crust, pre-bake the crust for 5-10 minutes before adding the filling.
