- ½ cup unsalted butter, cold and cubed
- 4–6 tablespoons ice water
- 2 medium zucchinis, thinly sliced
- 4 ounces goat cheese, crumbled
- 1 teaspoon black pepper
- 1 tablespoon fresh thyme leaves (plus extra for garnish)
- 1 egg, beaten (for egg wash)
Instructions
- In a large mixing bowl, combine the all-purpose flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat your oven to 400°F (200°C).
- In a bowl, combine the sliced zucchini, crumbled goat cheese, black pepper, and fresh thyme. Toss gently to combine and set aside.
- On a lightly floured surface, roll out the chilled dough into a rough circle about 12 inches in diameter. Transfer the dough to a parchment-lined baking sheet.
- Spoon the zucchini and goat cheese mixture onto the center of the dough, leaving a 2-inch border around the edges. Gently fold the edges of the dough over the filling, pleating it as you go.
- Brush the folded edges of the dough with the beaten egg.
- Place the galette in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown and the zucchini is tender.

- For a gluten-free option, use a gluten-free flour blend.
- If lactose intolerant, try a dairy-free cheese alternative.
- For a crispier crust, pre-bake the crust for 5-10 minutes before adding the filling.
