Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.
- In a separate bowl, combine the melted butter, egg, vanilla extract, grated zucchini, lemon zest, and lemon juice. Mix until fully incorporated.
- Pour the wet mixture into the bowl with the dry ingredients. Gently fold the ingredients together using a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are okay.
- Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean and the edges are lightly golden.
- Once baked, remove the pan from the oven and allow the squares to cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely.
- In a small bowl, whisk together the powdered sugar, lemon juice, and optional lemon zest until smooth. Adjust the consistency by adding more powdered sugar or lemon juice as needed.
- Once the squares are completely cooled, drizzle the lemon glaze over the top using a spoon or a piping bag for more control.
- Cut the cooled squares into neat pieces. Dust with additional powdered sugar if desired. Serve as a delightful breakfast or snack, perfect for enjoying with a cup of tea or coffee.
