  • 1 cup grated zucchini (about 1 medium zucchini, squeezed to remove excess moisture)
  • Zest of 1 lemon
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.
  3. In a separate bowl, combine the melted butter, egg, vanilla extract, grated zucchini, lemon zest, and lemon juice. Mix until fully incorporated.
  4. Pour the wet mixture into the bowl with the dry ingredients. Gently fold the ingredients together using a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are okay.
  5. Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean and the edges are lightly golden.

  7. In a small bowl, whisk together the powdered sugar, lemon juice, and optional lemon zest until smooth. Adjust the consistency by adding more powdered sugar or lemon juice as needed.
  8. Once the squares are completely cooled, drizzle the lemon glaze over the top using a spoon or a piping bag for more control.
  9. Cut the cooled squares into neat pieces. Dust with additional powdered sugar if desired. Serve as a delightful breakfast or snack, perfect for enjoying with a cup of tea or coffee.
