Ingredients

  • 1 medium zucchini (about 200g), grated
  • 1 medium sweet potato (about 200g), grated
  • 2 large eggs
  • 1/2 cup all-purpose flour (about 60g)
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Olive oil for frying

Instructions

  1. Prepare the Vegetables: Wash and grate the zucchini and sweet potato, then squeeze out excess moisture.
  2. Mix the Ingredients: Combine grated zucchini, sweet potato, green onions, garlic, eggs, flour, salt, and pepper in a bowl.
  3. Heat the Oil: In a skillet, heat about 2 tablespoons of olive oil over medium heat.
  4. Form the Fritters: Scoop out portions of the mixture and form them into patties.
  5. Fry the Fritters: Fry the fritters for about 3-4 minutes on each side until golden brown and crispy.
  6. Drain Excess Oil: Transfer cooked fritters to a plate lined with paper towels.
  7. Serve: Enjoy warm, with a dipping sauce if desired.
