- 3 very ripe bananas
- 1/4 cup smooth natural peanut butter
- 1 teaspoon vanilla extract
- 1 1/4 cup instant or quick cooking oats
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
- In a large bowl, mash the ripe bananas until mostly smooth with a few small chunks for texture.
- Add peanut butter and vanilla extract to the mashed bananas and mix until well combined.
- Stir in the oats, salt, and baking powder until fully incorporated.
- Fold in all but 1/3 cup of the chocolate chips to distribute throughout the batter.
- Transfer the mixture to the prepared loaf pan and smooth the top with a spatula.
- Sprinkle the reserved chocolate chips evenly over the top.
- Bake for 25–30 minutes, or until a knife inserted in the center comes out clean or with moist crumbs.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice into 6–8 bars.
Notes
- Use overripe bananas for the best natural sweetness.
- Store in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days.
- Bars can be frozen individually wrapped for longer storage—just thaw before eating.
