- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened

- 3 large eggs
- 1 cup apple cider

- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- Caramel sauce, for drizzling
Instructions
- Preheat your oven to 325°F (160°C). Mix graham cracker crumbs with melted butter and 2 tablespoons of sugar, then press into the bottom of a springform pan. Bake for 10 minutes and let cool.
- In a large mixing bowl, beat softened cream cheese and 1 cup of granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Pour in apple cider, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix until creamy.
- Pour the cheesecake filling over the cooled crust and bake for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let cool inside for an hour.
- Refrigerate the cheesecake for at least 4 hours or overnight. Remove the sides of the springform pan, slice, and serve with caramel sauce and a sprinkle of cinnamon.
