  • 2 large eggs, room temperature
  • 1 cup vegetable oil

  • 2 ripe bananas (about 1 cup mashed)

Instructions

  1. Prepare Zucchini: Preheat oven to 350°F (175°C). Line a muffin pan with liners. Shred zucchini and squeeze out excess moisture using a towel. Set aside.
  2. Mix Dry Ingredients: In a large bowl, sift together flour, baking soda, baking powder, cinnamon, and salt.
  3. Mix Wet Ingredients: In another bowl, mash bananas. Add sugar, eggs, vegetable oil, and vanilla extract. Stir until well combined.
  4. Combine: Add dry ingredients to wet mixture gradually, stirring until just combined. Fold in the shredded zucchini.
  5. Bake: Divide batter among muffin cups (fill about 3/4 full). Bake for 22–26 minutes or until a toothpick comes out clean. Cool in pan 5 minutes, then transfer to a wire rack.

Notes

  • Do not skip draining the zucchini—excess moisture can cause soggy muffins.
  • These muffins freeze well. Store in an airtight container and thaw before serving.
  • For a more indulgent treat, add a sprinkle of brown sugar or oats on top before baking.
