- 1 medium avocado, sliced
- 2 tablespoons lime juice (freshly squeezed)
Instructions
- Prepare the pickled onions by combining apple cider vinegar, water, and a pinch of salt in a small saucepan. Bring to a simmer, then add the sliced red onions and let sit for at least 30 minutes.
- Drain and rinse the jackfruit, remove the core and seeds, and shred the jackfruit pieces.
- In a large skillet, add the shredded jackfruit and BBQ sauce, cooking for 10-15 minutes until heated through.
- Warm the corn tortillas in a separate skillet for about 30 seconds on each side.
- Assemble the tacos by adding BBQ jackfruit to each tortilla, topping with pickled onions, cilantro, and avocado slices, and drizzling with lime juice.
