  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh blueberries (or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper and lightly grease it with non-stick spray.
  2. In a large bowl, whisk together melted butter and brown sugar until smooth.
  3. Add eggs one at a time, whisking after each addition. Mix in vanilla extract, lemon zest, and lemon juice until well combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually stir the dry ingredients into the wet ingredients until just combined.
  6. Gently fold in the blueberries using a spatula or wooden spoon.
  7. Spread the batter evenly into the prepared baking dish and smooth the top.
  8. Bake for 25–30 minutes or until edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Let the blondies cool in the pan for 10–15 minutes, then lift them out using the parchment paper and cool completely before cutting into squares.
