Description
A hearty and nutritious cabbage and bean soup packed with flavors.
Ingredients

- 1 small head of cabbage, chopped
- 2 cups of beans, cooked (any variety)
- 1 onion, diced
- 2 carrots, sliced
- 3 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 teaspoon of thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, carrots, and garlic until softened.
- Add the chopped cabbage and cook for a few minutes.
- Stir in the cooked beans, vegetable broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper to taste before serving.
Notes
- Feel free to add other vegetables as desired.
- This soup can be stored in the refrigerator for up to 3 days.
- It can be frozen for up to 2 months.
