Ingredients
- Chicken thighs – 1 lb (about 4-5 pieces, skin-on and bone-in for best flavor)
- Soy sauce – 1/4 cup (preferably low-sodium)
- Garlic – 4 cloves, minced
- Fresh ginger – 1 tablespoon, grated
- Honey – 2 tablespoons
- Sesame oil – 1 tablespoon
- Chicken broth – 2 cups (low-sodium recommended)
- Green onions – 3, chopped (for garnish)
- Chili flakes – 1 teaspoon (adjust to taste)
- Salt and pepper – to taste
- Olive oil – 1 tablespoon (for cooking)
Instructions
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down and sear for about 5-7 minutes until golden brown. Flip and cook for an additional 3-4 minutes. Remove and set aside.
- In the same skillet, reduce heat to medium and add minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
- Add soy sauce, honey, and sesame oil, stirring to combine.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the skillet.
- Return the seared chicken thighs to the skillet, skin-side up. Cover and let simmer for about 20-25 minutes until cooked through.
- Remove the lid, increase heat to medium-high, and allow the sauce to reduce for about 5-10 minutes, basting the chicken until thick and glossy.
- Transfer the caramelized chicken to a serving platter, ladle the broth around it, and garnish with green onions and chili flakes.
Notes
- For a gluten-free option, use tamari instead of soy sauce.
- Maple syrup can replace honey for a different sweetness.
- Use vegetable broth instead of chicken broth for a vegetarian version.
- Store leftovers in an airtight container in the refrigerator for up to three days.
