Description
A delightful treat that combines the tangy zest of lime with the sweet burst of cherries, perfect for breakfast, a midday snack, or dessert.
Ingredients
Scale
- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 cup cherry puree (made from fresh or frozen cherries)
- 1 tablespoon lime zest (plus extra for garnish)
- 2 tablespoons lime juice
- 1 cup powdered sugar (for glaze)
- Additional cherries and lime wedges (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, and salt. Mix well to ensure all dry ingredients are evenly distributed.
- In a separate bowl, whisk together the melted butter, milk, cherry puree, lime zest, and lime juice until smooth.
- Pour the wet mixture into the bowl of dry ingredients. Stir until just combined, being careful not to overmix. The mixture should be thick and slightly sticky.
- Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- While the squares are baking, prepare the glaze by mixing the powdered sugar with a tablespoon of water or lime juice until smooth. Adjust the consistency as needed.
- Once the oatmeal squares are done baking, remove them from the oven and allow them to cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely. Once cooled, drizzle the glaze over the top.
- Cut the squares into uniform pieces. Garnish with additional lime zest and arrange fresh cherries and lime wedges around the squares on a rustic wooden board for a beautiful presentation.
- Serve these delightful Cherry Limeade Oatmeal Squares as a refreshing snack or dessert.
