Description

A delightful treat that combines the tangy zest of lime with the sweet burst of cherries, perfect for breakfast, a midday snack, or dessert.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 cup cherry puree (made from fresh or frozen cherries)
  • 1 tablespoon lime zest (plus extra for garnish)
  • 2 tablespoons lime juice
  • 1 cup powdered sugar (for glaze)
  • Additional cherries and lime wedges (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, and salt. Mix well to ensure all dry ingredients are evenly distributed.
  3. In a separate bowl, whisk together the melted butter, milk, cherry puree, lime zest, and lime juice until smooth.
  4. Pour the wet mixture into the bowl of dry ingredients. Stir until just combined, being careful not to overmix. The mixture should be thick and slightly sticky.
  5. Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  6. While the squares are baking, prepare the glaze by mixing the powdered sugar with a tablespoon of water or lime juice until smooth. Adjust the consistency as needed.
  7. Once the oatmeal squares are done baking, remove them from the oven and allow them to cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely. Once cooled, drizzle the glaze over the top.
  8. Cut the squares into uniform pieces. Garnish with additional lime zest and arrange fresh cherries and lime wedges around the squares on a rustic wooden board for a beautiful presentation.
  9. Serve these delightful Cherry Limeade Oatmeal Squares as a refreshing snack or dessert.
